A Mexican restaurant in Downtown Summerlin that’s perfect for curbing your cravings for authentic, upscale Mexican cuisine. What I love most is the atmosphere. The restaurant is beautifully designed, and every nook and corner has its own flair and purpose. Downstairs, you’ll find the bar, while the two long staircases make the space feel like a grand courtyard. Upstairs offers additional dining areas that are great for a quieter experience. The food was delicious. We tried the taco salad, burrito, and shrimp and crab quesadillas, and everything was flavorful and tasted fresh. I would definitely come back when the family is craving tacos, salads, or Mexican comfort food. Their enchiladas are also worth trying. Reservations are highly recommended on weekends, especially for dinner.

Pancho's is an absolutely beautiful restaurant with a fantastic ambiance. From the moment you walk in, the atmosphere sets the perfect tone for a great evening out. I had the taco dishes served with rice and beans—the food was delicious and well-prepared. While the pricing is a bit on the higher side, the quality of the meal and the stunning setting make it worth it. This is a pretty good Mexican restaurant in the middle of Downtown Summerlin. From the exterior and right when you walk in, you become immersed in the surroundings that exist in this location. We only got a sneak peak of what interior dining area which seemed like this huge white room which looked pretty cool. We ended up just going to the bar area because we didn’t have to wait for a seat. The food we ordered was the con queso for happy hour and the tacos al carbon. Both are really good as you can’t go wrong with tacos at a Mexican restaurant. Although the taco’s were good, it was kind of missing something that we couldn’t really put our finger on it. It’s decent but it only comes with 2 tacos. The queso was really good as well, but the only bad part about it was that it was too much for us. The flavor feels repetitive so I’d suggest going with something else. Our server was a bartender since we were at the bar so it was pretty decent. Pretty sure he was busy with all the drink orders but that didn’t bother us since we just needed to wait for our food. It took about 20 minutes for our food to arrive but that’s fine since they give chips and salsa while we wait.

The atmosphere completely changes the vibe as soon as you go in it's like you are in a whole different part of the world. The service is great and attentive and the food was delicious and well displayed. Recommend the enchiladas and birria plate as it's what we tried and they were great. The Cadillac margaritas one of my favorite was made properly and with great balance not too strong or too watery. And can't forget the desert as we had the churros which were served with ice cream and a side of melted chocolate, would have a picture but it was enjoyed so quick I forgot to take a picture but I recommend as well. Over all great experience and we'll be returning soon.

What a great experience! Great service, atmosphere, and food! Had the chili verde burrito and it was delicious. Plenty of flavor and heat. Fresh salsa and chips as a freebie and it didn’t disappoint!
